Crockpot Berry Glazed Chicken | Plaid and PaleoWith fall brings crockpot season! I always forget how much I love my crockpot until cool weather rolls around. I tend to be a messy cook. I try to clean while cooking and still end up with a huge mess in my kitchen. This is where the crockpot comes in. Everything goes into one pot and out comes an amazing dinner! I love this berry glazed chicken. I used Juli at PaleOMG jam recipe, but you can use store bought blackberry jam just check the ingredients! I ate this berry glazed chicken over a baked sweet potato, and it was the perfect meal. Serves 2-3 but easily doubles for a bigger group!

Also in completely unrelated news, basketball season is here!! Well sort of. Colligate basketball programs were officially allowed to start practicing this past Saturday. I just want to warn any readers that semi-frequent basketball updates might be coming soon. I went to the University of Kansas, which has a very strong basketball program. Many a Saturday and Tuesday evenings were spent packed into Allen Fieldhouse with 16,500 of my closest friends. I donned my royal blue, put on my Jayhawk face tattoo and cheered on my team. I am a huge college basketball fan and nothing is better than March Madness. Just five months to go!

Crockpot Berry Glazed Chicken | Plaid and Paleo

Paleo Berry Glazed Crockpot Chicken

Ingredients

  • 2 chicken breasts
  • Glaze
  • 1/4 cup + 1/2 tbls honey
  • 1/3 cup coconut aminos
  • 1 tbls olive oil
  • 2 tbls blackberry-blueberry jam
  • 1 tsp almond butter
  • 1/2 tsp cider vinegar
  • 1/2 tsp toasted sesame oil
  • 2 garlic cloves, minced
  • 1/4 cup sweet onion, diced
  • 1/8 tsp crushed red pepper
  • sesame seeds, topping

Directions

  1. In a bowl mix all glaze ingredients together in a bowl.
  2. Turn crockpot to low and place chicken in bottom.
  3. Pour sauce ingredients over chicken and cook for 4 hours.
  4. Remove chicken from crockpot.
  5. Pour sauce into small sauce pot over medium heat.
  6. Bring to a boil then reduce to a simmer and cook for 20 minutes until sauce reduces.
  7. While the sauce is cooking, shred chicken with two forks.
  8. Toss chicken with sauce and serve with a sprinkle of sesame seeds.
