This past weekend flew by so fast. I had a friend in town for the 4th which was a lot of fun! All my favorite holidays revolve around food. I love food. I really do. I cooked up some hotdogs as the bun with spicy relish, potato salad and homemade salsa! This Curry Cauliflower salad would have made the perfect side but I ate it all before the 4th. It was inspired by the curry cauliflower salad at Lemonade in Los Angeles. I used to love this side but was more than a little shocked when I found out what was actually in it! I decided I needed to make a clean version and cut down the ingredient list. I tend to get overwhelmed if the ingredient list is a mile long. Over the past few months you might have noticed I have started to share simple yet delicious recipes with minimal ingredients whenever possible. Also I can’t recommend using salt and pepper enough! These two simple spices can add so much flavor to a dish.
I took a break from writing my ebook this weekend, which was nice but I am ready to get back in the kitchen! I have about half the recipes completed. I don’t have a set finish date because I don’t want to rush anything. I’ve had this idea in my head for more than a year, and I want to make sure everything is perfect!
